Cornbread - 21 Day Fix Approved!


Who doesn't love corn bread? This is a great fall recipe that I serve with my soups and especially chili! Not a hard recipe to put together and so good!

21 Day Fix Approved Cornbread

Makes: 24 muffins Each muffin= 1/4 yellow, 1/2 tsp, 1/6 red, 1/2 tsp sugar

  • 4 yellows corn fresh or frozen defrosted

  • 2 yellows almond milk

  • 2 reds of whole eggs

  • 2 cups brown rice flour

  • 1 tbsp baking powder

  • 12 tsp oil

  • 2 tsp honey

  • 12 tsp sugar

1. Mix eggs, flour, milk, powder, and oil together 2. Put corn in food processor and pulse a minute or two. Then fold in corn and honey 3. Place in 24 muffin tins 4. Bake about 25 mins on 400 until spongy top
